Chicken and Artichokes
Serve over rice for a complete meal. Sauce is wonderful.

Serves 6

Ingredients

Qty Unit Ingredient
2 lb Chicken breasts - boneless skinless, cut into strips
1 Tb paprika
Salt and Pepper to Taste
1 Can Artichoke hearts - 14.5 oz, drained and quartered
1/4 C All Purpose Flour
1 Can Chicken broth - 14. 5oz, fat free
1/2 C Dry Sherry
1 Tsp Dried rosemary leaves
Green onions, chopped for ganish - optional


Instructions

Preheat the oven to 350 degrees.

Spray a 3 quart baking dish with cooking spray and lay chicken breasts in it. Season with salt, pepper and paprika. Place artichokes around the chicken.

In a saucepan put the flour and slowly stir in the broth. Cook over medium heat until thickened about 5 minutes. Add the sherry, rosemary and continue to cook for 1 minute. Pour sauce over chicken and bake covered for one hour or until chicken is done.
