Chicken and Zucchini Salad
A wonderful light dish.

Serves 4

Ingredients

Qty Unit Ingredient
1 1/4 lb Zucchini, thinly sliced
1 lb Chicken - boneless skinless breast halves
1/4 C Olive oil plus 1 tablespoon
1/4 C Lemon juice
8 Oz Spinach, chopped
1/2 Onion - red, thinly sliced
3/4 C Pecans, chopped
1/4 C Parmesan cheese
1/4 C Mint - fresh, chopped
Salt and pepper to taste


Instructions

Whisk 1/4 cup oil, lemon juice, and salt and pepper to taste in a large bowl. Add zucchini, tossing to coat. Let marinate while the chicken is cooking. Heat remaining oil in a large skillet over medium heat. Season chicken with salt and pepper. Cook until golden brown on each side, about 7 minutes a side. Slice thinly. Toss chicken with zucchini mixture, spinach, onion, pecans, cheese, and mint. Serve.
