Chicken Pot Pie
This might be the ultimate comfort food. This recipe changes things up a little bit by adding sweet potatoes, so good!

Serves 6

Ingredients

Qty Unit Ingredient
1/2 C Celery, chopped
1 C Onion, chopped
1 C Carrots, chopped
1 C Sweet Potatoes, peeled and diced
1/3 C All purpose flour
1 1/2 C Chicken broth
1/2 C Milk - skim
2 C Chicken breasts - skinless cooked and diced
1/2 C Frozen Peas
C Refigerated reduced fat Crescent Rolls - 8 oz, use 6 triangles


Instructions

Preheat oven to 375 degrees.

Spray a skillet with cooking spray and saute the celery, carrots, and sweet potatoes for 10 minutes, until tender. Add the flour and stir to coat vegetables. Slowly add broth and milk, stirring constantly, bring to a boil. Reduce the heat and stir until thickened. Add the chicken and peas.

Put mixture into a 9 X 9 X 2 pan that has been prepared with cooking spray. Lay the crescent rolls on top, sealing the sides.

Bake for 10 to 15 minutes or until lightly browned on top.
