Crunchy Crispix Coated Chicken Cutlets
Great with creamy mashed potatoes and your families favorite vegetable.

Serves 4

Ingredients

Qty Unit Ingredient
2 C Crispix cereal, crushed
1/2 C Nonfat buttermilk, or use 1 beaten egg
1 1/2 lb Chicken Cutlets or boneless skinless breasts - pounded thin, thinly sliced
1 Tsp Old Bay Seasoning or salt and pepper
2 Tb Canola


Instructions

Crush cereal in a resealable bag, make sure not to pulverize cereal.

Put crushed cereal in a shallow bowl or plate. Put buttermilk in a seperate shallow container. Coat each piece of chicken with buttermilk and then the cereal and put is aside on a plate. Season the chicken with Old Bay or salt and pepper.

In a skillet, heat oil and cook chicken until it is browned and cooked through, turning it once about 4 minutes per side for thinly sliced cutlets.
