Moroccan Chicken
Great sweet flavor and will be great any time of the year. Serve with rice or couscous and sweet potatoe.

Serves 4

Ingredients

Qty Unit Ingredient
1/4 C Currants or raisins
1/4 C Currant Jelly
1/4 C White wine
2 Tb Soy Sauce
1 Tsp Curry Powder
1/4 Tsp Cinnamon
1 Tb Olive oil
1 1/2 lb Chicken breasts - boneless, skinless, cut int 1 inch pieces
1 ea Red bell pepper, chopped
1 C Carrot chips or sliced carrots


Instructions

Combine currants, jelly, wine, soy sauce, curry powder and cinnamon in a small bowl.

In a heavy skillet heat oil and add chicken, peppers, and carrots. Cook them for about 8 minutes or until chicken is done. Stir in sauce mixture and cook for 2 minutes more, or until sauce is slightly thickened. Serve hot.
