Heat grill to medium-high. Place chicken, scallions, ginger, lemon juice, paprika, cumin, cardamom, cayenne, 1 1/2 teaspoons salt, and 1/2
teaspoon pepper in a medium bowl, tossing to combine. Let marinate for 10 to 30 minutes. Transfer mixture to a food processor, pulsing until coarsely chopped, yet not pasty, 10 to 12 times. Form into
patties 3/4 inches thick. Oil grates. Season patties to taste with salt and pepper. Grill until opaque throughout, 2 to 3 minutes per side. Halve pita, toasting on grill if desired. Place 2 chicken
patties into each pocket, along with cucumber slices and cilantro sprigs. Serve with cumin.
