Stuffed Chicken Breasts with Feta, Spinach and Ham
Freeze half for a no cook meal, another night. Your familiy will love this very elegant yet flavorful meal.

Serves 8

Ingredients

Qty Unit Ingredient
8 ea Chicken breasts - boneless skinless
Salt and Pepper to Taste
3 Oz Cream cheese, reduced fat
1/2 C Feta cheese -reduced fat
1/2 C Spinach leaves - baby
8 ea Ham slices - think


Instructions

Using a knife, make a split along one side of the breast to form a pocket. Season chicken with salt and pepper.

In a small bowl, combine the cheeses and mix well with a fork. Stuff each breast with the cheese mixture, spinach and ham.

To Eat now, preheat oven to 350 degrees and place breasts in a baking dish that has been sprayed with cooking spray. Cover with foil and bake for 45 minutes or until chicken is done.

If you want to freeze them, do not bake. After chicken is filed, wrap individually, label and freeze up to 5 months.

When ready to cook, you can either cook immediately from the freezer in a baking dish sprayed with cooking spray and covered for one hour at 350, or you can defrost them and cook for 45 minutes.
