Salmon with Chili lime spice rub
The spice rub on this really brings out the good flavor of the fish. You could use trout if you prefer, instead of the salmon.

Serves 4

Ingredients

Qty Unit Ingredient
1 1/2 lb Salmon fillet
1 Tsp Brown Sugar
1/2 Tsp Chili Powder
1/4 Tsp Cinnamon
1/4 Tsp Salt
2 Tsp Fresh lime juice


Instructions

Preheat broiler and set oven rack about 6 inches from heating element. Line a baking sheet with aluminum foil, and lay fish flat on baking sheet, skin side down. In a small bowl put the brown sugar, chili powder, cinnamon and salt and mix to combine. Sprinkle fillet with lime juice and then spinkle spice mixture onto the fillets, and press spices into the fish. Broil fish for 11 minutes, until the spices are browned but not blackened and the fish is cooked thorugh and is flaky. Remove from oven and cut into 4 pieces and serve.
