Lowfat Crockpot Chicken Pho
My family loves this!

Serves 4

Ingredients

Qty Unit Ingredient
1 lb Whole Chicken breasts, skinned
8 ea Cilantro Sprigs fresh
3 ea Scallions, seperated into white and green parts
2 ea Garlic cloves, bruised
1 Tsp Coriander Seeds
1 ea Star anise or Cinnamon Stick
1/2 Tsp Salt
Dash Freshly ground black pepper
8 C Reduced sodium chicken broth
1/4 lb Rice noodles
Fresh cilantro, basil and mint sprigs and lime wedges for garnish


Instructions

Put chicken, ciilantro, white parts of scallions, garlic, coriander seeds, star anise, salt and pepper in a 5 or 6 quart crockpot. Pour broth over ingredients and cover. Cook for 4 to 5 hours on high and 8 to 10 hours on low, or until chicken and vegetables are fork tender.

Remove chicken from broth and let cool. When able to handle, pull chicken into bite size pieces. Prepare noodles according to package directions, drain and set aside. Strain broth in a colander lined with cheese cloth into a large bowl or pot. Discard vegetables and spices. Put chicken into the broth and add the noodles, green scallion parts. Garnish with cilantro, basil, mint sprigs and lime wedges.
