Lowfat Crockpot Cider Pork with Sweet Potatoes
What a perfect meal to enjoy the bounty of fall!

Serves 6

Ingredients

Qty Unit Ingredient
1 lb Pork Loin - boneless, cut into 1 1/2 inch chunks
2 Onions - medium, coarsely chopped
2 Celery stalks, cut into 1/2 inch slices
2 Parsnips, peeled and cut into 3/4 inch chunks
2 Sweet Potatoes, peeled and cut into 1 inch cubes
1 C Apple cider
1 C Chicken broth - reduced sodium
1 1/2 Tsp Garlic and herb seasoning- salt free
1/2 Tb Salt
1 Apple - large granny smith, cut into 1/2 inch slices


Instructions

In a large skillet over medium-high, add the pork, cooking until it browns, about 6 minutes, turning occasionally. Transfer to a 6 quart slow cooker. To the skillet, add onions over low heat. Cook, scraping the browned bits from the bottom of the pan, until the onions are softened, about 3 minutes. Add onions to the crockpot, along with celery, parsnips, potatoes, cider, broth, seasoning, and salt. Cover cooking on low 8 to 10 hours or on high 4 to 5 hours, until pork and vegetables are tender. Twenty minutes before the cooking time is up, stir apples into the slow cooker. Cover, cooking until the apples are tender, about 15 minutes.
