Lowfat Crockpot Pork Stew with Northern Beans
This is an excellent blend of meats.

Serves 8

Ingredients

Qty Unit Ingredient
1 1/2 lb Northern beans - picked over, rinsed and dried
2 Pork chops, smoked
1 Pork tenderloin, cut into 1 inch chunks
1/2 lb Sausage, smoked
3 Carrots, cut into 3/4 inch slices
1 Onion - coarsely chopped
1 Celery stalk, sliced
1 Tb Garlic and herb seasoning- salt free
1/2 Tsp Thyme - dried
1 Can Chicken broth - 14.5 oz reduced sodium
1/4 Water
1 Can Tomatoes - whole with juice
1/2 Tsp Salt


Instructions

In a 6 quart slow cooker, add beans, carrots, onion, celery, garlic, seasoning, and thyme. Pour the broth and water over. Add the chops, pushing into eh liquid until covered. Cover, cooking on low 8 to 10 hours or 4 to 5 hours on high. About 40 minutes before the cooking time is up, remove pork chops and set aside. Over medium-high heat, heat a large skillet and add tenderloin and sausage. Cook until browned, about 6 minutes, turning occasionally. Stir in tomatoes and their juice. Add salt, stirring with a spoon to break up tomatoes. Add sausage mixture to the slow cooker. Cover and cook on high until tenderloin is cooked through, about 30 minutes. Remove bones from chops and discard. Cut into bite-sized pieces, and return it to the slow cooker. Cover, letting stand until the pork is reheated through, about 5 minutes. Serve.
