Beer Batter Fish Fillets
An exceptional dill-flavored beer batter for deep-frying fish.

Serves 8

Ingredients

Qty Unit Ingredient
2 lb Fish fillets - cod, haddock or other firm white fish
1 C Flour
1 Tsp Salt
1 Tsp Baking powder
1/2 Tsp Dill weed
3/4 C Beer
1/2 C Milk
2 ea Eggs, beaten
2 C Oil for frying


Instructions

In a bowl, combine flour, salt, baking powder, and dill. Add beer, milk, eggs and mix well. Place fish in batter mixture; coat well and let stand 15 minutes. Heat deep fryer to 375 degrees; place fish in hot oil, and fry until golden brown. Note: Cook fish in batches to maintain oil temperature.
