Healthy Poached Halibut With Vegetables
Light and healthy this recipe is a great blend of flavors.

Serves 2

Ingredients

Qty Unit Ingredient
3/4 lb Halibut steaks, cut into 3 inch sections
1 C Cauliflower, cot into 1 inch florets
1 C Onion, sliced
1 C Carrot, peeled and sliced
1/2 Tb Lemon juice - fresh
2 Tsp Garlic - minced
1/2 C Chicken or vegetable stock
Salt and pepper to taste


Instructions

In a skillet over medium high heat cook garlic and onions in 1 TB of the stock until softened. Add remaining stock and vegetables and simmer 5 minutes covered. Season fish with lemon juice, salt and pepper and add to pan. Cook covered for about 6 minutes or until done.
