Healthy Salmon and Cucumber Salad
Light and healthy; this salad is an ideal supper for a hot summer night.

Serves 2

Ingredients

Qty Unit Ingredient
3/4 lb Salmon fillet - skinned, cut into 2 portions
2 Tsp Dijon mustard
1 Tsp Honey
1 ea Cucumber, peeled, seeded and diced
1 ea Tomato - small, seeded and chopped
1 ea Avocado, diced
1 Tb Chives, chopped
1 Tsp Garlic - minced
1 Tb Dill, chopped
2 Tb Lemon juice - fresh, divided
2 Tsp Olive oil
Salt and pepper, to taste


Instructions

Heat a skillet over medium high heat until hot. Season salmon with 1 TB lemon juice, salt and pepper and sear salmon 2 to 3 minutes. Meanwhile combine honey and mustard. Turn salmon and brush with mixture. Combine remaining lemon juice, oil and seasoning and toss gently with vegetables to combine. Top with salmon and serve.
