Healthy Salmon and Cucumber Salad
Light and healthy; this salad is an ideal supper for a hot summer night.

Cucumber, peeled, seeded and diced |

Instructions
Heat a skillet over medium high heat until hot. Season salmon with 1 TB lemon juice, salt and pepper and sear salmon 2 to 3 minutes. Meanwhile
combine honey and mustard. Turn salmon and brush with mixture. Combine remaining lemon juice, oil and seasoning and toss gently with vegetables to combine. Top with salmon and serve.
