Healthy Salmon With Black Beans
Salmon is delicious served with bold flavors. Enjoy!

Serves 2

Ingredients

Qty Unit Ingredient
3/4 lb Salmon fillet - skinned, cut into portions
1/2 C Onion, minced
1/2 ea Bell pepper - red, minced
2 Tsp Garlic - minced
1/3 C Chicken or vegetable stock
1 C Black beans, drained
1 Tb Chili powder, or to taste
1 C Salad Greens
1/2 ea Avocado, diced
2 Tb Cilantro, chopped
1 1/2 Tb Lemon juice - fresh
1 Tb Olive oil
1 Tb Pumpkin seeds, chopped
Salt and pepper to taste


Instructions

Preheat broiler and ovenproof skillet on high 5 inches from heat. In a skillet over medium high heat cook onion, pepper and garlic in 1 TB of the stock until softened. Add beans, broth and chili and simmer 10 minutes. Broil salmon 3 to 4 minutes or until done. Whisk together avocado, cilantro, lemon, oil, salt and pepper. Toss with greens, top with salmon and pumpkin seeds.
