Poached Salmon
Serve with a vegetable and salad for a delightful, low - calorie meal. This is an especially good meal for a warm evening and any leftovers are great for lunch the next day.

Serves 4

Ingredients

Qty Unit Ingredient
4 ea Salmon fillets, 3/4 oz
4 ea White wine, 4 oz, optional
2 Tb Dill, fresh. If you use dried dill, use 2 tsp
1/2 C Vegetable stock


Instructions

In a large skillet, bring broth and wine to a boil. Add seasonings and simmer 2 minutes. Add salmon fillets and cover. Poach 4 to 6 minutes until fish flakes with a fork and has lost its transparent color.
