Salmon - Apple Pasta
A new way to enjoy salmon and vegetables in one dish. Use your favorite pasta.

Serves 4

Ingredients

Qty Unit Ingredient
1 pkg Pasta, your choice, 10 oz
2 Tb Butter
1 C Asparagus, diagonally sliced
1 C Mushrooms - sliced
1/4 C Onion, chopped
1/8 Tsp Salt
1/8 Tsp Pepper
1/4 Tsp Oregano - dried
1 ea Golden delicious apple, cored, cut into 1/2 inch cubes
Parmesan cheese, optional
1 lb Salmon, chunked
3 Tb Half and Half


Instructions

Cook linguine, or pasta choice according to package directions; drain and set aside. Melt 1 Tb margarine in large frying pan; Sauté salmon chunks 5 minutes. Remove from pan and keep warm. Add remaining 1 Tb margarine to pan and sauté mushrooms, asparagus and onion 2 minutes. Add salt, pepper, oregano and half and half; cook on high heat 1 minute more. Add apple, cooked salmon chunks and cook 30 seconds. Serve over hot pasta with freshly grated parmesan cheese.
