Creamy Tomato Soup
Just like you had as a kid, just homemade. Serve with grilled cheese on a cold evening.

Serves 8

Ingredients

Qty Unit Ingredient
4 Tb Butter
1/2 C Onion, chopped
3 Tb Flour
4 C Lowfat Milk
1 ea Bay Leaf
1 1/2 Tsp Sugar
1 1/4 Tsp Salt
1/2 Tsp Baking Soda
3 C Fresh tomatoes or 1 can 28 oz crushed tomatoes with liquid


Instructions

In a medium pot, melt butter. Add onion and stir till softened but not browned, about 3 minutes. Add flour and contine stirring for 2 minutes. Add milk, bay leaf, sugar, and salt and turn up heat a little. Continue to cook, stirring occasionally until it is lightly thickend about 10 minutes.

Stir baking soda into the tomatoes and then add the tomatoes and bring to a boil. Remove from heat and bay leaf. Puree soup using a blender or processor. Serve.
