Light Minestrone
Great for a night that eveyone is not very hungry. Pair with a nice loaf of bread and a side salad of your choice.

Serves 8

Ingredients

Qty Unit Ingredient
1 Tb Olive Oil
1 ea Onion - large, diced
2 ea Carrots - large, diced
2 Can Chicken or Vegetable Broth - 15 oz each
2 ea Soup Cans of Water
1 1/2 C Uncooked thin egg noodles
1 ea Yellow Squash - medium, diced
3/4 C Frozen peas
1 Can Cannellini or pinto beans - 15 oz, drained
1 Can Diced Tomatoes - 15 oz or 2 cups fresh tomatoes
10 ea Fresh basil leaves
Salt and Pepper to taste
Parmesan Cheese for serving


Instructions

In a pot, heat oil and add onion and saute for a few minutes, meanwhile chop the carrots. Add carrots, broth and water to pan, cover and bring to a boil.

Add noodles and simmer for about 5 minutes. Add squash, peas, beans and tomatoes and return soup to a simmer. Cook until squash is tender. Stir in basil and season soup with salt and pepper to taste.

Serve soup topped with Parmesan Cheese.
