Coarsely grate the potatoes and finely dice or grate the onion. Drain the vegetables and wrap them in a clean towel for a minute to get extra
moisture out.
Put grated vegetables into a large bowl and stir in eggs. Mix in flour, salt and cayenne pepper thouroughly. Preheat oven to 250 degrees. Prepare baking sheet by lining it with
foil.
In a skillet, heat 2 tb of the oil. When pan and oil are hot, put scoopfuls of potato mix in pan and use spatula to flatten. Cook for several minutes per side until they are browned
well. After each batch of cakes add more oil to skillet. If cakes start to get too dark before middle is cooked reduce heat. Put cooked cakes onto baking sheet and keep in warmed oven till ready to serve
