Black Bean Soup
Serve with cornbread.

Serves 8

Ingredients

Qty Unit Ingredient
1 Tb Olive oil
1 1/2 C Chopped Onion
1 Tb Garlic, minced
3 Can Black beans - 15 oz each, with their liquid
1 Can Chicken broth - 14.5 oz
1 Can Diced Tomatoes - 14.5 oz with juice
1 Can Tomato Sauce - 15 oz
1 Tb Chili Powder
1/2 C Red wine - Optional
Add ins - Sour cream, crushed tortilla chips, shredded mozzarella cheese, Tabasco Sauce


Instructions

Heat oil in a large pot over medium heat. Add the onions and garlic; saute until the onions start to brown, about 5 minutes. Next, add the beans, broth, tomatoes, tomato sauce, and chili powder. Bring the soup to a boil. Reduce heat and simmer for about 20 minutes. After about 10 minutes of simmering add the wine if desired, and stir to combine. Puree some of the soup in a blender to the desired texture and pour back into the pot. Serve with or without optional add ins.
