Linguine with Anchovy and Tomato Sauce
Jazz up the same old spaghetti dish with some anchovies.

Serves 6

Ingredients

Qty Unit Ingredient
1 lb Linguine
1 Can Tomatoes - 28 oz, chopped and drained
2 Tb Olive Oil - Extra virgin
1 Tsp Garlic, minced
6 Anchovy fillets, with some of their oil
Salt and pepper to taste


Instructions

Bring a pot of salted water to a boil; place the oil in a deep skillet over medium heat. Add garlic and anchovies after one minute. When garlic sizzles and anchovies break apart, add tomatoes. Turn heat to medium-high, bringing to a boil. Cook until mixture becomes saucy, about 15 minutes, stirring occasionally. Cook pasta. Season sauce to taste, and serve over the linguine.
