Pasta with Herbs
This is a great summer meal when the herbs are fresh and plentyful.

Mixed fresh herbs - parsley, dill, basil, oregano, thyme, or mint |

Salt and pepper to taste |

Instructions
Bring a large pot of salted water to a boil. In a small saucepan over medium-low heat, add oil and garlic. Cook until garlic begins to color, and
remove from heat. Wash and mince the herbs. Place them in a large bowl. Cut the butter into bits and add it to the bowl. Cook pasta until tender, but not mushy, reserving 1/2 cup cooking water. Drain.
Toss with herbs and garlic-oil mixture. Add more oil or some cooking water if the mix seems too dry. Season to taste, and serve.
