Pasta with Peas and Prosciutto
A quick meal for any night of the week.

Serves 4

Ingredients

Qty Unit Ingredient
12 Oz Futtuccine
1 Tb Butter
1 Shallot - large, finely chopped
1/4 C Cream - heavy
1 pkg Peas - frozen 10 oz, thawed
8 Prosciutto, halved lengthwise and thinly sliced crosswise
1 Tb Lemon zest, grated
1/2 C Parmesan cheese, finely grated
Salt and pepper to taste
1 Tb Lemon juice - fresh


Instructions

In a large pot of salted water, cook pasta. Drain, reserving 1 cup pasta water. To make the sauce, melt butter in a large skillet over medium-low heat. Add shallot, cooking until softened, about 5 minutes. Add cream, peas, and prosciutto, bringing to a gentle simmer over medium heat. Simmer until peas are heated thru, 3 to 4 minutes. Stir lemon zest and juice in. Pour sauce over pasta. Add Parmesan, seasoning generously with salt and pepper. Add water to thin sauce to suit your taste. Serve topped with cheese.
