Penne with Smoked Sausage and Peppers
Hearty, substantial meal! Enjoy!

Serves 8

Ingredients

Qty Unit Ingredient
1 pkg Penne or other short pasta - 16 oz
1 1/2 Tb Olive Oil
1/2 ea Onion - large, sliced into half rings
2 ea Green bell peppers, sliced into half rings
1/2 Tsp Garlic powder or 1 tsp minced garlic
10 Oz Precooked smoked chicken or turkey sausage, sliced and halved or quartered
3 Can Italian Style Diced Tomatoes - 15 oz each
Parmesan cheese, grated, to taste


Instructions

Prepare pasta according to package directions and drain.

In a large frying pan, heat oil and add onions, peppers and garlic. Saute until softened, about 6 to 7 minutes. Add the sausage and saute for 4 more minutes. Add tomatoes and simmer sauce for 12 to 14 minutes.

In a large metal bowl, mix the pasta with the sauce and top with cheese.
