Dreamy Creamy Shrimp and Mozzarella Melt
Serve with green salad and crusty bread.

Marinated Artichoke Hearts - 6 oz each, drained and chopped |

Shrimp, peeled and deveined |

Mozzarella cheese, diced or 2 cups shredded |

Instructions
Preheat oven to 400 degrees. In a large skillet, heat 1 tsp oil and add garlic and saute for 1 minute. Add artichokes, red pepper and cook for 3
minutes. Remove from skillet and put in a 8X8 Baking dish.
Heat remaining oil in the skillet. Add the shrimp and saute until they turn pink. Drain excess liquid from the pan and put the shrimp on
top of the contents of the baking dish. Top with mozzarella cheese and sprinkle with Parmesan cheese. Bake for 20 minutes until the cheese is melted and dish is heated through.
