Garlic and Shrimp Soup
This is a very simple soup that serves as a nice side dish for your main course.

Serves 4

Ingredients

Qty Unit Ingredient
6 C Shrimp stock
1 1/2 lb Shrimp, peeled
1/4 C Olive Oil - Extra virgin
12 ea Garlic - medium cloves, peeled
4 Italian bread slices - thick
Parsley - fresh, minced
Salt and pepper to taste


Instructions

Over medium heat, combine oil and garlic in a deep skillet. Sprinkle with salt and pepper. Cook until cloves are tender and lightly browned, stirring occasionally, about 10 minutes. Lower the heat if they are browning too quickly. Remove the garlic from the skillet with a slotted spoon. Turn heat to low and add the bread. Cook each side until lightly browned, about 4 minutes. Remove bread; add stock, raising heat to medium-high. When stock is almost at a boil, add shrimp and salt and pepper to taste. Cook until shrimp are pink, about 4 minutes . Divide bread and garlic among 4 bowls. Ladle soup into bowls, sprinkling with parsley and serve.
