Greek Pasta Salad with Shrimp
The secret to a great greek pasta salad is lots of fresh, colorful ingredients. You will agree this salad packs a powerful punch.

Serves 4

Ingredients

Qty Unit Ingredient
12 Oz Ditalini or penne pasta
1 Tb Olive oil
1 ea Green bell pepper - medium, seeded and chopped
2 Tsp Garlic, minced
1 1/4 lb Medium shrimp, peeled and deveined
1 Tsp Dried oregano
1/2 C Chicken broth- regular or fat free, less sodium
1/3 C Fresh mint, chopped
1 Tb Red wine vinegar
1 Tsp Dijon Mustard
1/2 Tsp Dried thyme
1/2 Tsp Salt
1/4 Tsp Freshly ground black pepper
1/2 C Feta chesse, crumbled


Instructions

Prepare pasta according to the package directions. Drain and put in large bowl. Over medium heat, in a large skillet, heat oil and add the pepper and garlic. cook for 1 minute stirring frequently. Add the shrimp and oregano and cook until the shrimp are pink, about 3 minutes. Put in bowl with pasta. In a small bowl, mix together the broth, mint, vinegar, mustard, thyme, salt and pepper. Pour over teh pasta and shrimp and toss to combine. Make sure everything is coated with dressing. Just before serving, top with feta cheese.
