Sauteed Shrimp with Tomatoes and Lemon
Super fast and another of member Shelley's fall favorites.

Serves 4

Ingredients

Qty Unit Ingredient
1 lb Shrimp - peeled and deveined
1 Tb Olive oil
1 Tsp Garlic - minced
1/4 Tsp Salt
1 Pt Cherry tomatoes, halved
2 Tb Capers, rinsed
2 Tb Parsley, finely chopped
1 Tb Lemon juice


Instructions

In a large skillet over medium high heat, cook shrimp in olive oil until almost done, turning once. Remove shrimp and keep warm. Add tomatoes and cook until softened - 3 minutes. Add capers, parsley and lemon and stir. Return the shrimp to the pan, heat briefly and serve.
