Shrimp and Broccoli Stir Fry
Family friendly, serve with rice and a frozen egg roll.

Serves 6

Ingredients

Qty Unit Ingredient
1 1/2 C Dry rice, cooked according to directions on package
2 ea Brocolli Heads florets
3 Tb Soy Sauce
2 Tb Rice Vinegar
1 1/2 Tb Brown Sugar
1 Tb Fresh ginger, peeled and chopped or 1/2 tsp ground
1 Tb Sesame or Peanut Oil
4 ea Scallions, thinly sliced
1 Can Corn - 15 oz
1 lb Large Shrimp, peeled and deveined


Instructions

Prepare rice according to package directions.

While rice is cooking steam broccoli until just tender. Drain. In a measuring cup whisk together soy sauce, vinegar, brown sugar and ginger until sugar dissolves.

In a skillet or wok heat oil and add scallions, corn and shrimp. Stir fry for abou 3 minutes until shrimp are pink. Add brocooli and soy mixture and stir fry until all ingredients are coated with sauce and hot. Serve over the rice.
