Shrimp and Broccoli Stir Fry
Family friendly, serve with rice and a frozen egg roll.

Instructions
Prepare rice according to package directions.
While rice is cooking steam broccoli until just tender. Drain. In a measuring cup whisk
together soy sauce, vinegar, brown sugar and ginger until sugar dissolves.
In a skillet or wok heat oil and add scallions, corn and shrimp. Stir fry for abou 3 minutes until shrimp are pink. Add
brocooli and soy mixture and stir fry until all ingredients are coated with sauce and hot. Serve over the rice.
