Shrimp in Lime Juice
This is a great quick dish to serve with white rice.

Serves 4

Ingredients

Qty Unit Ingredient
1 1/2 lb Shrimp, peeled and deveined
1/2 C Lime Juice
1/4 C Sugar
1 Tb Nam Pla
2 Tb Corn Oil
1 Tsp Garlic, minced
1/2 Tsp Hot Red Pepper Flakes
Cilantro - fresh, minced


Instructions

Combine lime juice, sugar, and nam pla. Place oil in a large skillet over high heat. After one minute, add garlic and pepper flakes. Cook until garlic starts to brown. Add lemon juice mixture, and cook until it's reduced by half, 3 to 5 minutes. There will only be about 1/4 cup of liquid in the skillet. Add shrimp, cooking over high heat. Shrimp will begin to turn pink immediately. Stir after 2 minutes of cooking. Continue cooking until shrimp are completely pink, about 2 minutes longer. Taste, adjusting seasoning if necessary. Garnish with cilantro and serve.
