Shrimp Salad with Papaya
Serve with a thick slice of hearty bread.

Hearts of palm - canned, sliced and cut crosswise into 1/4 inch thick slices |

Papaya, peeled, seeded and diced |

Instructions
In a large stockpot, add 2 to 3 inches of water and put over high heat and bring to a boil. Put shrimp in colander and place in pot over teh
boiling water. Cover and steam until the shrimp are bright pink. About 5 minutes. Put shrimp in large bowl. Add the hearts of plam, papaya, chives, oil and vinegar and toss to combine. Season with salt
and pepper to taste and serve.
