Shrimp Salad with Papaya
Serve with a thick slice of hearty bread.

Serves 4

Ingredients

Qty Unit Ingredient
1 1/4 lb Medium shrimp, peeled and deveined
1 C Hearts of palm - canned, sliced and cut crosswise into 1/4 inch thick slices
1 C Papaya, peeled, seeded and diced
2 Tb Chives - fresh, chopped
1 Tb Cider vinegar
1 Tb Olive oil
Salt and Freshly Ground Black Pepper


Instructions

In a large stockpot, add 2 to 3 inches of water and put over high heat and bring to a boil. Put shrimp in colander and place in pot over teh boiling water. Cover and steam until the shrimp are bright pink. About 5 minutes. Put shrimp in large bowl. Add the hearts of plam, papaya, chives, oil and vinegar and toss to combine. Season with salt and pepper to taste and serve.
