Shrimp with Tomatoes and lemon
Light and delicious!

Serves 4

Ingredients

Qty Unit Ingredient
1 Tb Olive oil
1 lb Medium shrimp, peeled and deveined
1 Tsp Garlic, minced
Salt
1 Pt Cherry Tomatoes, halved
2 Tb Capers, drained
2 Tb Fresh parsley, chopped
1 1/4 Tsp Fresh lemon juice


Instructions

Over medium high heat, in a large skillet heat oil and add the shrimp, garlic and salt and cook shrimp until they begin to turn opaque but are not completely cooked, about 2 minutes. Put shrimp in a bowl and set aside. Add the tomatoes to the skillet and cook them, stirring frequetnly until they soften. Return the shrimp to the skillet add the capers and parsely and cook the shrimp for 2 more minutes. Add the lemon juice and toss it with the shrimp to coat them.
