Wild Mushroom Risotto with Shrimp and Peas
Rich and delicious

Serves 8

Ingredients

Qty Unit Ingredient
2 pkg Wild Mushroom Risotto Mix - 5.45 oz each, try and get pkg with microwave directions
1 lb Shrimp - medium, peeled and deveined
1 Tb Olive oil
1 1/2 C Frozen peas


Instructions

REmove peas and shrimp from freezer. In a microwavable bowl, prepare both boxes of risotto according to directions on box. If microwave directions are not available then use your stovetop to prepare.

In a large skillet saute shrimp in oil until it is pink about 3 minutes. When shrimp is cooked, remove from heat and add peas to skillet and saute them for about 2 mintues.

When risotto is done cooking and tender and broth is absorbed toss wtih peas and shrimp. Cover until you are ready to serve.
