Yellow Curried Shrimp
This highly fragrant dish is great with a side of white rice.

Serves 4

Ingredients

Qty Unit Ingredient
2 lb Shrimp - large, peeled and deveined
2 Tb Vegetable Oil
1 C Onion, minced
1 Tb Garlic, minced
1 Tb Ginger - fresh, peeled and minced
1 Tsp Hot Red Pepper Flakes
1 Tb Curry Powder
1 C Coconut milk - canned
2 Tb Nam Pla
1/4 C Cilantro - fresh, chopped
Salt and pepper to taste


Instructions

In a large deep skillet over medium heat, add oil, onion, garlic, ginger, and pepper flakes. Cook, stirring frequently, until veggies are tender and the mixture becomes pasty. Add curry powder, cooking for another minute, stirring. Add coconut milk, raising heat to medium-high. Cook until the mixture is reduced by half, stirring occasionally. Add shrimp, salt and pepper. Cook until shrimp release their liquid and turn pink, 5 to 10 minutes. Add 1 tablespoon nam pla. Taste and adjust seasonings if necessary. Garnish with cilantro and serve.
