Lowfat Crockpot Black Bean Soup with Sweet Potatoes
Yummy!

Serves 6

Ingredients

Qty Unit Ingredient
2 Tsp Canola Oil
2 ea Onions, finely chopped
2 Tsp Ground Coriander
1 Tsp Ground Cumin
2 Can Black beans - 29 oz, rinsed and drained
1 ea Sweet Potato - large, peeled and chopped
6 ea Cilantro Sprigs fresh
1/2 Tsp Salt
1/4 Tsp Freshly ground black pepper
6 C Vegetable broth
1/4 C Plain low fat yogurt for garnish
4 ea Lime slices, finely chopped for garnish
Cilantro leaves- fresh for garnish


Instructions

In a skillet add oil andonions and cook for about 5 minutes, until softened. Add coriander and cumin and cook until fragrant, sirring occasionally .

Put beans in a 5 or 6 quart crockpot. Add onion mixture, potato, cilantro, salt and pepper. Pour broth over contents of crockpot and cover. Cook for 4 to 5 hours on high and 8 to 10 hours on low. When done cooking vegetables should be fork tender. Remove cilantro sprigs.

Working in small batches pour soup in blender or processor and puree. Return soup to crockpot. Garnish each serving with lime, yogurt and cilantro leaves.
