Udon Noodle Soup
Light and wonderful flavor.

Serves 6

Ingredients

Qty Unit Ingredient
10 Oz Udon noodles
4 C Chicken or vegetable broth - 15 oz
1 C Water
1/2 lb Shrimp, peeled and deveined
2 ea Scallions, green parts only, sliced
1/3 C Fresh cilantro, chopped
1 Tb Fish sauce or Soy Sauce
2 Tb Lime juice
8 Oz Fresh mushrooms, sliced
1 C Baby Spinach, optional


Instructions

In a large pot, boil the water to cook the noodles. When they go into the water bring broth and water to a low boil in another pan and add the rest of the ingredients except the spinach to boil. Cook the noodles for 5 minute or until they are al dente. Drain them and add them to the soup. Add the spinach and stir to combine. Serve hot.
