I like to do a little preparation work each night to make the dinner the next night a snap. While I am making a salad for tonight, I’ll chop any hardy vegetables I need to tomorrow’s dinner. I like to marinate things overnight, assemble crockpot dinners the night before and that way when the rush is on, life is easy.

The key to making fast recipes it to choose items that cook in very little time. Sounds obvious doesn’t it? Meats and chicken breasts need to be cut or pounded thin. Fresh pasta cooks faster than dried. Even frozen fresh pasta straight from the freeze cooks in just a couple of minutes when added to boiling water. I love my hot water dispenser. It gives me a head start on pasta water, cooking rice and make couscous instantaneously. Just add hot water, flavoring ingredient and let it sit until the rest of dinner is ready.

When I come home from the grocery store, I brown hamburger with onions to use as the basis of many recipes. While I am unloading my groceries several easy dinner starts are simmering on the stove. When it is done, I portion it into zip lock bags and either freeze or refrigerate until ready to use. You can do the same thing with ground turkey too.

Campouts! Family camping is such a bonding experience. I grew up camping with my family and some of my favorite memories are of camping; playing with my cousins while the adults sat around the coolers, card games under tall trees, hunting Easter eggs in a meadow and S’mores.
