Asian Pasta Salad with Chicken (or Tofu)
This recipes is one of member Shelley's favorite fall meals and one of our favorites too. It uses cooked chicken (or tofu) so select it on a week when you can make extra chicken earlier in the week.

Serves 8

Ingredients

Qty Unit Ingredient
1 lb Pasta spirals
2 Tb Lime juice
5 Tb Soy sauce
1 1/2 Tb Sugar
1 Tb Sesame oil
1 Tsp Fresh ginger, grated
2 C Carrots - matchstick cut or shredded
1/4 C Green onion, chopped
1 1/2 C Chicken - cooked (or tofu), diced
1 Tsp Sesame seeds, toasted


Instructions

Cook the pasta according to package directions. Meanwhile mix together the lime juice, soy, sugar, ginger, carrots and green onions. When the pasta is done, drain and rinse under cool water to cool. Drain and combine with mixture and chicken (or tofu). Sprinkle with sesame seeds and serve.
