Broccoli Tomato Salad
This colorful salad is the perfect side for any meal!

Serves 6

Ingredients

Qty Unit Ingredient
1 lb Broccoli
1 Pt Cherry tomatoes, halved
1 Can Chickpeas, 15oz. drained, rinsed
1 Tb Dijon mustard
2 Tb Red wine vinegar
2 Tb Olive Oil
1/2 ea Red onion - small, minced
Salt & pepper, to taste


Instructions

Cut florets from broccolis. Steam broccoli until crisp and tender, about 5 minutes. In a large bowl, whisk mustard, vinegar, oil, and onion. Season to taste. Add tomatoes, chickpeas, and broccoli. Toss to coat. Serve chilled or room temperature.
