Cheesy Polenta with Mushrooms
Polenta is a staple in many mediterranean countries that, when dressed up with cheese and sauce, is delicious! Try it as an alternative to rice and pasta .

Serves 4

Ingredients

Qty Unit Ingredient
12 Oz Polenta - premade
2 Tb Butter
1 C Parmesan cheese
1 Oz Porcini mushrooms (dried)
2 ea Shallot
2 C Mushrooms (brown)
4 Tb Olive oil
1 1/3 C Tomato puree
4 Tb Parsley
4 Tb White wine
1 Dash Salt
1 Dash Pepper


Instructions

Soak the dried mushrooms, just covered in hot water, for fifteen minutes. Meanwhile, chop the shallots and slice mushrooms. Add them to heated oil in a saucepan and cook until tender (approximately five minutes). Chop the drained mushrooms, then add them, along with the liquid, tomato puree, parsley, butter, and wine to the sauce. Stir occasionally. Season to taste with salt and pepper. Simmer sauce until thick (ten minutes or so). Add cheese to sauce and stir in gently. Serve sauce over warmed polenta.
