Lima Bean-Spinach Salad
This dish is very pleasing to the eye...and palate! Try different leafy greens and dressing for variety.

Serves 4

Ingredients

Qty Unit Ingredient
2 pkg Lima beans - 16 oz. each (frozen)
6 ea Green onions, chopped
1/2 lb Spinach (fresh baby works best)
1 Tb Mint, chopped
1 Tb White wine vinegar
3 1/2 Tb Oilve oil
1 Dash Salt
1 Dash Pepper


Instructions

Blanch frozen beans and remove skins. Boil beans until just tender. Drain well, patting dry with paper towels if needed. Add beans to a salad bowl along with the baby spinach and onions. Toss. For the dressing, add remaining ingredients in a small bowl/jar and whisk/shake well. Drizzle the dressing over the salad and toss gently. Ready to serve.
