Penne Pasta with Spinach and Capers
Simply delicious and one of member Shelley's fall favorites.

Serves 8

Ingredients

Qty Unit Ingredient
1 lb Penne pasta
1 pkg Baby spinach - 12 - 18 oz
1/2 C Pesto sauce - prepared
2 Tb Olive oil
1 Tsp Garlic - minced
2 Tb Capers, rinsed
1/4 C Parmesan cheese - grated
Salt and pepper to taste


Instructions

Cook pasta in boiling water until done adding the spinach for the last minute of cook time. Meanwhile in a large serving bowl, mix pesto, olive oil, capers, and garlic. When the pasta is done, drain well and add to pesto mixture. Toss and season with salt and pepper. Top with Parmesan and serve.
