Thai Noodle Salad
Serve this tasty salad with deli roast beef, cooked chicken or extra firm tofu. Either way the flavor is delicious. This is one of member Shelley's favorite fall recipes.

Serves 4

Ingredients

Qty Unit Ingredient
1 pkg Beanthread or cellophane noodles - 3.75 oz
1/2 lb Deli roast beef - cooked chicken or Tofu, diced
1 1/2 C Snow peas, thinly sliced
1 C Carrots - matchstick
1/3 C Teriyaki sauce
Tb Lime juice
1 Tb Sesame oil
1/4 C Cilantro, chopped
1 ea Romaine hearts, chopped


Instructions

Cover the noodles with boiling water and let stand 15 minutes. Meanwhile, combine the teriyaki sauce, sesame oil and lime juice in a microwavable bowl. Add beef (chicken or tofu), carrots and snow peas and microwave until heated through - 2 to 3 minutes. Drain noodles and combine with mixture and cilantro. Serve over romaine.
