Aegean Chicken
Mediterranean meal with lots of flair and flavor. Serve with brown rice or couscous.

Serves 4

Ingredients

Qty Unit Ingredient
4 ea Chicken breasts halves - bone in - 6 oz eac, skinned
1/2 Tsp Salt
1/4 Tsp Freshly Ground Pepper
1 Can Artichoke hearts quartered - 14 oz, drained
16 large pimiento stuffed green olives
12 Pitted Dates, halved
2 Tb Light brown sugar
1 Tb Balsamic Vinegar
1 1/2 Tsp Herb Chicken Seasoning


Instructions

Sprinkle chicken with 1/4 tsp of the salt and 1/8 tsp of the pepper. Spray a skillet with cooking spray and add chicken. Cook over medium high heat, turning occasionally until browned about 2 minutes per side.

Put chicken into crock pot. In a bowl combine the artichokes, olives, dates, brown sugar, vinegar, chicken seasoning and the rest of the salt and pepper, stir to mix. Pour over chicken in crock pot. Cover and cook for 4 hours on high or 8 hours on low, until chicken is fork tender.
