Instructions
Sprinkle chicken with 1/4 tsp of salt and 1/8 tsp of pepper. Spray a skillet with cooking spray. Add chicken and cook over medium high heat for 9
minutes, turning frequently untlil browned.
Put chicken into a crock pot and add the leeks, mushrooms, and carrots to the skillet. Cook, stirring until the vegetables begin to soften, about 5
minutes. Pour the vegetables over the chicken. Add the tapioca. poultry seasoning and rest of salt and pepper to the slow cooker. Mix well. Cover and cook until chicken is fork tender, about 4 hours on
high or 8 hours on low.
