Chicken Sticks
Kids enjoy this meal, a lot! Serve with a fruit kabob.

Serves 6

Ingredients

Qty Unit Ingredient
1 ea Egg
1/3 C Parmesan cheese, grated
2 lb Chicken Tenderloins
2 Tb Butter
2 Tb Olive Oil
8 ea Wooden Skewers
1 C Crushed stoned wheat crackers or bread crumbs


Instructions

In a bowl, beat egg and on a plate combine crushed crackers and cheese. Dip chicken piece into the egg, allow extra egg to drip back into bowl and then coat with cracker and cheese mixture. Set the prepared chicken on another plate.

In a large skillet heat half of butter and oil. Add tenderloins to skillet, in a single layer and not overlapping. Cook for about 4 minutes per side until nicely browned. Continue until all have been cooked, add the remaining butter and oil to skillet if needed.

PUt skewers through chicken, if desired to serve.
