Fiesta Chicken and Rice
A family favorite

Serves 8

Ingredients

Qty Unit Ingredient
1 pkg Yellow Saffron Rice - 10 oz
1 Tsp Cumin
1/2 Tsp Garlic powder
1/2 Tsp Salt
4 ea Chicken Breasts - boneless skinless
1 Tb Olive Oil
2 Tb Lime Juice
12 Oz Mild chunky salsa
3/4 C Cheddar Cheese, shredded


Instructions

Prepare rice according to package directions. In a small bowl combine the cumin, garlic powder, and salt. Sprinkle and rub mixture evenly over the chicken. Cut the chicken into half inch wide strips.

In a large skillet heat the oil and add the chicken and cook it for 4 minutes per side. When done, the centers should no longer be pink. If outside is browning too quickly cover the pan for a few minutes.

Sprinkle lime juice over chicken and pour the salsa over everything. Sir it gently until it is warmed through. Sprinkle the chicken with salsa and cheese and serve over the rice.
