Spicy Chicken Burger
A hot dish for a hot summer night!

Serves 4

Ingredients

Qty Unit Ingredient
1 1/2 lb Chicken - thighs boneless skinless, cut into rough chunks
4 Scallions, thinly sliced
3 Tb Ginger - fresh, chopped
2 Tb Lemon juice - fresh
1 Tb Paprika
2 Tsp Cumin, ground
1/2 Tsp Cardamom - ground
1/4 Tsp Cayenne pepper
4 Whole wheat pitas
1 Cucumber, halved lengthwise and thinly sliced
1/2 C Cilantro sprigs - fresh
Salt and pepper to taste
Vegetable Oil


Instructions

Heat grill to medium-high. Place chicken, scallions, ginger, lemon juice, paprika, cumin, cardamom, cayenne, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper in a medium bowl, tossing to combine. Let marinate for 10 to 30 minutes. Transfer mixture to a food processor, pulsing until coarsely chopped, yet not pasty, 10 to 12 times. Form into patties 3/4 inches thick. Oil grates. Season patties to taste with salt and pepper. Grill until opaque throughout, 2 to 3 minutes per side. Halve pita, toasting on grill if desired. Place 2 chicken patties into each pocket, along with cucumber slices and cilantro sprigs. Serve with cumin.
