Lowfat Crockpot Spicy Chili
If you don't want this smokin' hot, you can reduce the chipotle, or even eliminate it.

Serves 4

Ingredients

Qty Unit Ingredient
3/4 lb Turkey breast - smoked boneless skinless, cut into 1/2 inch cubes
4 ea Turkey bacon slices - chopped
2 Zucchini, quartered lengthwise and sliced
1 Pepper - yellow bell, seeded and diced
1 Onion - large sweet, diced
1 Can Beans - pink 15 oz., rinsed and drained
1 C Water
3/4 C Salsa verde - fat free
1 Chipotle en adobo, seeded and chopped finely
4 Garlic cloves, thinly sliced
2 Tb Chili powder
2 Tb Cornmeal
1/4 C Cilantro leaves - fresh for garnish


Instructions

In a 6 quart crockpot, add turkey, bacon, zucchini, bell pepper, onion, beans, water, salsa, chipotle, garlic, and chili powder; mix well. Cover, cooking on low 8 to 10 hours or on high 4 to 5 hours. About 20 minutes before the cooking time is through, slowly stir the cornmeal into the pot. Cover, cooking on high until thickened, about 15 minutes. Garnish with cilantro and serve.
